View Full Version : Need recipe for salmon cakes/patties

I just scraped a salmon carcass with a spoon after I filleted it and ended up with a cereal bowl full. All of the recipes I've found use canned salmon. Does anyone have a recipe that uses raw salmon? Thanks!

take that bowl of salmon, add:
1 egg
1/2 cup finely diced onion
garlic powder
black pepper
a few pinches of dill
a few piches of salt
3-4 dashes or worchester or soy sauce
one cup of crushed ritz crackers, or saltines, or seasoned bread crumbs.
Mix well and form into patties about 3/4" thick.
drop into buttered frying pan on medium and cook until each side is golden brown and firm.
Make up a little tarter sauce and enjoy!

only thing we do different is adding diced red pepper, basil, sweet onion, and use only bread crumbs...great way to use the left overs from the carcass!

Salmon Cakes
3/4 cup plain breadcrumbs
1/4 cup finely chopped celery (http://www.recipezaar.com/library/getentry.zsp?id=216)
1/4 cup finely chopped onions (http://www.recipezaar.com/library/getentry.zsp?id=148)
1/4 cup sour cream (http://www.recipezaar.com/library/getentry.zsp?id=147)
1 tablespoon Dijon mustard (http://www.recipezaar.com/library/getentry.zsp?id=332)
1 egg white, beaten
1 lb cooked salmon
1 (4 1/2 ounce) can chopped green chilies (http://www.recipezaar.com/library/getentry.zsp?id=323), drained
In frying pan saute chopped celery and chopped onions for 5 minutes. Cool.
In large bowl combine all ingredients mix well and refridgerate for at least 10 minutes.
Shape mixture into 4 patties, about 3/4 inch thick.
Spray skillet with nonstick cooking spray. Heat over medium high heat cook 6-8 minutes.
Serve with salsa, cocktail or tartar sauce or lemon herb mayo:.
3/4 cup mayo 1 tbsp fresh lemon juice 1 tbsp horseradish 1/2 tsp thyme 2 tbsp melted butter, cooled.
