any ideas on how best to cook rockfish, lings sea bass etc ? also will any worms cook out or are they part of the deal?

Coat with tempura and deep fry or just dust with flour and seasonings and panfry in a little olive oil. Or season and place under broiler or on foil on your grill. Pretty versatile. Just be sure to cook hot and fast, especially the thinner rockfish fillets.

As far as worms go, no, they don't "cook out." Best to hold the fillet up to the light to detect any worms prior to cooking. cut out and proceed. Do not be overly paranoid about this. they won't hurt anything and really aren't all that common anyway.

Blackened bottom fish is fabulous. Use any leftovers for fish tacos. They also make a great mild fish and chips.

Beer Batter, seasoned bread crumbs or panko deep fry or pan fry. The key is not to cook too long. We go 2-3 minutes per side in the pan and just fry to golden brown in the deep fryer---Yummy!

However we are on a health kick and have been pan frying in a little butter and olive oil 1 1/2 minutes on each side and then place in a 250 degree oven for about 7 minutes or until done. Then sprinkle with a little salt/pepper and lemon juice---very Yummy!! We just had it for dinner tonight with home grown tomatoes and cole slaw. I made a mustard sauce with pan drippings and brown mustard, ginger, honey and horshradis and a touch of apple cider vinegar.:cheers:

Mix Pride of the West batter very thin, dip fish in batter, then dredge in panko and like everyone else said pan fry it hot and fast. Another one I do on Ling Cod is melt buter in a nonstick pan cover the bottom of the pan with sliced onion, on top of the onion sprikle whatever seasoning you like, put the fish on top and cook on med-high heat flip once serve topped with whatever sauce you like, smokey chipotle is a good one, so is hollindase.

Keep it simple. For peace at home with spouce & kids, pick the worms out. Heat up the Fry Daddy and just drop the fillets or pieces in until they float and turn a beautiful golden brown. Take them out and salt them immediately. Then sit down with a good tartar sauce and enjoy until you're out of fish or grossly overfed.
