Here's the recipe folks this is really good.
Brine,makes one gallon
1 gallon of water
1/2 cup non-iodized salt
1 cup mortons tender quick
5 tbsp of liquid smoke

Put turkey in plastic bucket with brine.Let stand in cool place for 24 hrs.Remove from brine,dry thoroughly.Oil entire surface of turkey well.Put breast side down on rack in preheated oven at 325 for 1 1/2 hrs.Reduce to 200 and bake 1 hr. for each pound of bird.
When my wife oils the bird she uses vegatable oil she just pours some on and rubs it all over the bird with a paper towel.She also says to make 2 gal of brine for a 5 gallon bucket thats plenty then put something on top of turkey to help hold it under water as it might try to float above the brine.You can find mortons tender quick at Fred Meyers its hard to find sometimes.Guys and gals this is reall good you've got to try it.My wifes been doing this for several yrs and has people calling her to do it for them.If I can do it any one can. http://www.ifish.net/forum/images/graemlins/smile.gifWhen its done the meat almost falls off the bone bet you can't clean it with out eating it at the same time !!! Just be sure that you clean out the white stuff left in the bottom of the five gallon bucket after you're done smelt dipping!
