You simply can't have Thanksgiving without Loretta Ericksons Smoked salmon dip. It is a classic round these here parts.

Yum:

1 lb smoked salmon flaked
8 ounces cream cheese
1 Tablespoon lemon juice
2 Tbs grated onions
1 tsp chives
2 tsp horseradish fresh hot
1/2 cup mayo
Flake smoked salmon and mix together well. Chill.
Add milk depending on thickness desired.
Chilling tends to thicken.

I am on my way to the store to get stuff to make it now!
Any other smoked salmon classics? What I hate about it, is that you just can't display smoked salmon in a pretty fashion! Can you? I would love to just have smoked salmon and crackers, but it looks so darn ugly!

That smoke salmon dip tasted excellent at the IFish campout/barbecue. Since I don't have any smoked salmon and I do have smoked sturgeon, maybe I'll try the sturgeon instead.

Another great dish on these cold days is Sturgeon chowder. You can add a little clam juice if you like a clammy flavor, but it'll taste excellent without. A nice mild chowder taste.

Growing up in Twin Rocks with my grandparents smoked salmon in various configurations was always a part of every holiday. Your receipe is almost exactily the same as grandma Sample use to make. The only difference is she would add grated Tillamook sharp cheddar cheese. One way we serve smoked salmon is to in a bowl add smoked salmon, a SMALL amount of sour cream, lemon pepper and blend together very well with a fork. We have found that doing this in a bowl works better for us than the food processer because it allows us to keep it a little dryer. This creates an attractive, fairly dry spread that you can use with crackers and vegetables. Can't take it... must have some NOW!

Slathered on it on a big slice of bread and..... now I have to make more!

I headed home now ,I got some smoked salmon in the fridge..if my son hasn't been by today,ummmm ,a cold brew and some ritz...life is good now I just need new rods and reels...soon...Os

HEY JEN, slowly set down my smoked salmon out in your gargage and put your hands behind your neck and back away. SLOWLY. No funny biz. Kidding, it's still here.... safe and sound in the freeze. Gosh, I only have 12 lbs of smoked salmon left! WHAT TO DO????

Good dip Jennie. Added a little extra horseradish and a couple of drops worcester, and tabasco to add a little extra zing. Thanks for the recipe. I'll have to post my wife's salmon and rice recipe sometime.

Thanks for giving us that great dip!

Now they think I can cook! OH NO!

just kidding.

I plan on having it every Thanksgiving from now on.
