I just took the plunge and got the big Texas Traeger. I had smoked trout and carne asada yesterday and ribeye tonight. Looking at doing up a brisket by weeks end. It's Lipitor time...

After looking at Jennies top-post, I was wondering if we can get a non-fish favorite smoker recipe post going. I have the Traeger site ones copied and printed. My wife and kid are not big fish eaters, so briskets, turkeys, roasts, ribs, gamebirds, chicken, etc would be great. I even have a hankering for smoked BBQ chicken pizza. Any ideas?

Try the 5 bean recipe that is in the traeger book. Great eats. The One with Jack Danials.

I made baby backs a few weeks ago and they were outstanding.

Beer can whole chicken is also very good and super easy. Just follow the recipe out of the book :cheers:

Here's a chicken recipe that you'll like Doctor. This one is really good over charcoal but I'm sure you can adapt it to your Traeger with great results.

Grilled Garlic Chicken

2 chickens, cut up
1 bunch scallions, minced
6 big garlic cloves, peeled and finely chopped
2 cups orange juice
1/4 cup cider vinegar
2 teaspoons dried oregano
2 teaspoons kosher(coarse) salt
1/2-1 full teaspoon crushed red pepper flakes (to taste)

Place the chicken in one or two large resealable plastic bags and add the rest of the ingredients. Shake to mix. Refrigerate overnight.

Fire up a grill to medium heat or until the coals are lightly covered with ash. Cook the chicken skin side up for 20 minutes. Turn and cook an additional 15 to 20 minutes or until the juices run clear when a thigh is pricked with a fork; it should read 180 degrees on an instant-read thermometer.

Yield: 4 servings..............Mighty good! :food:
