Dishwasher Salmon with Mandarin Orange Butter
Ingredients:
Directions:
• 4 salmon fillets
• 4 “drizzles” olive oil
• 4 sprigs of tarragon
• 2 mandarin oranges
• Small red onion
• Salt & pepper
• Heavy duty foil
•
Sauce
• 1 cup mandarin juice
• 1 cup white wine
• Zest of 2 mandarins
• Ό cup shallots
• 2 bay leaves
• 1 tsp whole black peppercorns
• 1 tsp minced garlic
• 1 tsp dried thyme
• 1 Tbsp honey
• ½ cup heavy cream
• 1 stick butter, cut into small pieces
Cut 4 (12-inch) square sheets of foil. Place 1 fillet on each square.
Drizzle with olive oil and arrange tarragon, orange slices and onion slices over each fillet. Season with salt & pepper.
Fold and pinch the aluminium foil extra tightly to create a watertight seal around each fillet. Make sure the packet is airtight by pressing down on it gently with your hand. If air escapes easily, rewrap.
Place foil packets on the top rack of the dishwasher. Run dishwasher for the entire “normal” cycle. When cycle is complete, take out salmon, discard foil, place 1 fillet on each plate, and drizzle a generous service of Mandarin Orange butter over top.
If you don’t have a dishwasher, bake foil-wrapped packets in a preheated 400° oven for 12 minutes. (But what fun is that?!)
Sauce
Combine mandarin juice, zest, shallots, bay leaf, peppercorns, garlic, thyme, wine and honey in a saucepan and bring to a boil. Reduce to a simmer and continue to cook until liquid has reduced by Ύ. Strain sauce then return to saucepan and add cream. Wisk in butter little by little until sauce is smooth and thick. Do not allow sauce to boil.
I thought my wife was crazy when she first showed me this but it really makes Great salmon. Plus it is fun to have dinner parties with this recipe.
Friends are amazed (and sometimes a little frightened) that you cooked dinner in the dishwasher.

:whazzup: hmmm... bake it for 12 minutes or wash it and dry it for an hour?!?!:whazzup:
:grin:Sounds like a great recipe, but I think I'll stick to cooking in the oven or barbeque.:grin:

WAYOUT....not a bad Idea, but if you dont have a good seal on the fish you could be burping bubbles..or looking like this in the morning,after setting on the throne all night!http://www.ifish.net/gallery/data/500/vba85791.jpg
Cause dishsoap not only cleans out dishes well....it cleans out other things as well!!
