After a sweet weekend on the blue, I decided to try a new recipe that I thought up. I took a halibut filet cut into about 4" long pieces, then butterflyed the filet. The stuffing consisted of whipped cream cheese, bay shrimp, and fresh crab meat. Mixed it all together and stuffed it into the filet. Covered the filet with bread crumbs and pat of butter on top. Baked it for about 20 minutes covered then uncovered for another 10 minutes until the halibut is cooked. Served with garlic bread, and bbq'd skewered veggies and a cold one. Best halibut I have ever had.

Glad to see someone else working on recipes for ‘crab and shrimp stuffed’ Halibut fillets. :applause: This is a dream recipe for me.
I’m gonna stuff mine from the top, with an incision (operation) forming an “H” shaped pocket inside the chunks of white gold. {the pocket will be formed by making a cut lengthwise halfway down, on a thick fillet piece, then working the knife from inside the cut towards each side, without cutting through the edges. Kind of like a ‘change purse’ that you’d squeeze to open}. :idea:
I’m gonna start with your ‘base’ recipe, but expand it a tad. I’m creating/working on a unique recipe today for my honey for tonight, I hope she likes it. :food: :angel:
I’m thinking a ‘filling’ of fresh crab meat, chopped medium shrimp, cream cheese, garlic, green onion, a fresh herb (still undecided-maybe dill, basil, thyme, parsley, OR sage – don’t know yet), then topped with a grated cheese/crumb topping, and possibly a simple butter, butter cream sauce , or Hollandaise to accompany… I want to keep the flavors subtle as to not overpower the fresh halibut/seafood. :bowdown:
Add some fresh veggies and call it a day! :cheers:

Last night I tryed something new.
Sliced Halibut into thin slices added fresh crab, rolled it and used a toothpick to hold. Then dipped in batter and deepfryed. Great flavor but very rich.

DELICIOUS..........the only thing is it was missing just a little something and can't figure it out, but omg that was tasty. Any suggestions? I oven baked for 20min and uncovered for 20min and it came out perfect. Thanks!

minced green onions mixed in with the cream cheese. It's a must or the stuffing tasts 'flat'

So do you use boxed bread crumbs? If so what kind? Just trying to make sure I purchase all of the right components. It sounds amazing!

I use the progresso bread crumbs, garlic and butter flavor.
