Cedar Plank Mexican Chicken
2 boneless chicken breasts
1 can whole mild green chilies
salt
Shredded Monterey Jack Cheese
1 cedar plank
olive oil
Soak cedar plank in water 30 minutes. Pound boneless chicken breasts flat between layers of plastic wrap. Open chilies and pour liquid into flat dish. Place breast pieces into liquid and turn to coat. Split the chilies and open them out flat. Pat plank dry and coat top surface with olive oil. Place plank on grill and heat on medium until hot. Salt chicken breasts, place on hot plank and cover each breast with the flattened chilies. Cook covered on medium for 20 minutes. Remove from heat and top each breast with the Monterey Jack cheese and serve.
