Hello All,
I just found a long lost Clam chowder recipe I wanted to share of my father's.
My mom passed away in Febuary and was going through some of there paper's and I ran across this recipe that all will enjoy!
Dad's Clam Chowder
Chop Clams and save juice-
Fry Bacon intil lightly brown- about 4 strip smokey or pepper type
Add about 1/2 cup chopped onion and cook unitl tender
Add about 2 tbsp. four or corn starch and let thicken a bit.
Add about a cup of cooked diced potatoes (I like the red ones since they are firmer)
cup or so of clam juice or the juice you have from the clams or the type you buy for added flavor
Salt and pepper to taste
I use a pinch of lemon dill and a few dabs of worchester sauce and if you have it, some chopped parsley
Add clams with potates
Add milk (Around 2 cups)
Then let simmer or until hot but do not bring to boil
If you add a pich of soda, this will keep milk from curldling
Dot with butter when serving
Always taste better the second day
This will make 3-4 servings and you can double if you like.
