Tonights recipe keeps with the theme of simple.
I had a couple small tail fillets left over from a weekend springer. Below is the result
Fresh springer tail meat filleted and skinned.
Season with a pinch of kosher salt and fresh cracked pepper.
Sauté with olive oil and fresh garlic.
Mix wide egg fettuccine al dente' with fresh pesto ( garlic, basil, oil ).
Top pasta with salmon.
Garnish with red bell pepper.
