Sometimes simple is better.

"Fresh" springer fillet
Butterfly a pocket in the filet
Season salmon with kosher salt and fresh ground pepper
Fill pocket with shrimp and parmesean cheese
Place on BBQ
Garnish with red pepper and green onion.

Best served with a Sauvingnon Blanc. May I suggest Nobilo from New Zealand :food:

Sounds and looks yummy! I like parmesean and salmon..... One of my favorite simple recipes involves spicing a fillet with something like Johnny's Seasoning Salt, coat with a thin layer of mayonnaise and coat over top with grated parmesean cheese and bake. It's lovely, and always a big hit with family and friends for me!
