You'll probably think no way, but this combination of ingredients is incredibly good. I grew up on soups and stews, guess that is how dollars got stretched with my mom raising two boys by herself. I have a total love for soup and I am always looking to try any new soups. I took a trip to LA a few weeks ago and a restuarant I ate in offered "spinach in chicken broth soup", this was a no brainer for me, I love spinach and I love chicken broth. It was incredibly good and as I talked to the waitress who said she makes it all the time because it is easy I decided to give it a go. There is no real recipe here just the concept as I have made it many times now and it's easy.
Take a large soup bowl and fill it with fresh spinach.
Microwave the spinach in the bowl for 45 seconds to get it to wilt a little. Pour "hot" chicken broth, or any broth you like over the spinach and let it wilt down somemore. Top the soup with any grated cheese you like and add fresh french bread with butter on the side. This can be a great meal or the start to an even better meal.
If you need a chicken broth recipe here's my favorite:
Pour 2 cans swanson chicken broth in a pot,
add 2 cans water and 2 chicken boullion cubes,
add 2 peeled carrots cut into large pieces,
add 1/2 of an onion,
add 1/2 teaspoon peppercorns,
garlic powder or onion powder? your choice,
add 2lbs. chicken wings,
bring to boil and simmer about 2-3 hours.
strain into another pot, cool and remove fat or leave it if you want.
You can choose to remove or add any of the chicken meat.
