I have a nice roast just about thawed out. Any ideas? I am thinking treat it like a prime rib in the oven, maybe finish it off for 2 hours in the smoker???

If it were elk, I would sear all sides in heavy saute pan, wrap it in bacon and then slow roast it in the oven or indirect heat over coals/hickory. If moose is as lean as elk, this should work.

If you can keep it moist/larded, a nice lean roast can benefit from a rotisserie as well.
