Anybody got a good recipe for BBQing Sockeye Salmon fillets?

here is one of my favorites

You need 1 Salmon Fillet with skin on.

cover top of fillet with Mayo.
Sprinkle dried onion flakes all over mayo
add dried parsley on top.

Build "boat" out of tin foil about 1/2 inch tall.

place fillet in boat and place in bbq.

fill boat will beer of choice (i like an amber for this recipe)

BBQ until heart of fillet is done, keeping adequate amount of beer around the fillet.

Serve with rice and vegetables.

Can't really mess this one up... the key is to poach the salmon in the beer. the mayo, onion, and parsley adds a great texture and flavor.

fresh Sockeye needs very little...less is more....I usually just add salt and lemon....it's the best salmon imho

I agree with fastaction, sockeye is the best. I usually use this recipe on fall fish.
I start with fillets with the skin on and cut into pieces. 1 side of a typical silver would make about 4-5 pieces.

The marinade would consist of the following:
1 cup Orange juice
1 cup soy sauce
1/4 cup kentucky whiskey
1 cup brown sugar
2 cloves finely chopped garlic

Soak the fillets in the marinade for 2 - 4 hours
Heat up the Bar-B-Q and just before putting the fillets on, spray the grill with some PAM cooking spray. Do this from a low angle because it will flare up.
Now place the fillets, meat side down, onto the grill and cook for 3-4 minutes. With a big spatula, flip the fillets over onto the skin side (the PAM helps release the fish from the grill) cook for another 3-4 minutes and they are done. The skin will probably stick to the grill, so just remove the finished meat and serve it, and pull the skin off the grill later. I don't think you will be disappointed in this recipe. :cheers:
