OK, if you order these as an appetizer in a restaurant, they'll probably be called "Angels on Horseback" or something lame like that. I think my name is more descriptibe, and it still has the right number of syllables:

- Cut thin sliced bacon strips into thirds

- Wrap the cut bacon strip around a shucked oyster, and secure with a toothpick

- Place in a broiler pan (the kind with the slots so the juice drains below), and under the broiler on high

- After about 5 minutes, turn the oysters over.

- After about another 4-5 minutes, remove from the oven and enjoy.

- These are really good!

Fishtales Restaurant in Newport serves these with eggs for breakfast. They are to die for.

can you do giant scallops the same way, or is the time less?

I had bacon wrappen scallops at Skamania Lodge once and am in need of a serious fix

Yes, But it would be better if you par-boiled your bacon prior to wrapping the scallops... I par-boil the bacon when I do oysters too... With the scallops when you flip them over sprinkle them with a nice sweet wine..

made these and bacon wrapped giant shrimp this weekend... OUTSTANDING!
Thanks for the idea... had not considered adding these to my usual bacon wrapped sea critters!
