I love smoking fish. I have smoked most of the common ones, however I am looking for a good receipe for smoking kokonee.

Kokonee is really yummy smoked. Almost like it better than salmon. We eat it up real quick so all I do is sprinkle with salt, onion powder, pepper, garlic, parsley....just about anything you want will do. I use one pan in my Big Chief. You can use two if you want it smokier tasting. Mesquite or Hickory gives a nice strong flavor. Alder or Cherry a little mellower. Babysit it a little in the smoker until it is the texture you want. Some people like it real moist and some like shoe leather. Either way it's good! Keep in frig bagged up of course to store.

1/2 CUP BROWN SUGAR
1/2 CUP CANNING SALT
1/4 CUP MOLASSES
8 CUPS WATER
Mix this all up in a good sized bowl and add your Kokanee.
Let sit for 24-36 hours in the fridge.
Take out and rinse kokanee off with water and pat dry with paper towels or cloth.
Lay out on racks and add spices if you want.
let sit for hour or two before putting in the smoker.
smoke kokanee changing out the chips to your liking.
Viola! Kokanee candy!

PM Fallriverguy. Not only is he a kokannee killing machine, but he has perfected a perfect dry brine is is INSANE! He's the dude to ask, or purchase some of his stuff. You will not be sorry!

1/2 cup sea salt
1 cup brown sugar
1 tblsp fresh ground pepper
1 tblspn tumeric
1 teaspoon garlic powder
1 teaspoon ground cayenne pepper
2 qts water
soak fish for at least 6 hours in fridge, clean and blot dry
smoke using apple wood and apple juice ( in a pan in smoker)for however long you like.
