I made some the other night that was great... Only took about 45 minutes total prep time and cost about $20.00 for a serving of six large helpings.

If anyone wants it pm me... If not I wont take the time to write it all down..

Sauce ingredients

4" lemon grass

2 tbs Thai fish sauce

4 tbs Lee Kum Kee Oyster sauce

2 tbs Lee Kum Kee Hoisen sauce

2 tbs soy sauce

2 tbs Seasoned rice vinegar

2 tbs sugar

2 tbs minced garlic

2 tbs minced ginger root

1 tbs Hot Hungary paprika

juice from one large lime

3 tbs toasted sesame oil

2 boneless skinless chicken breasts

3/4 box of Thai wide noodle



6 tbs blanched peanuts

1/2 block of firm tofu 1/2" cube

4 greens onions

1/2 cup chopped cilantro

1/2 cup whole Thai basil leaves

1 cup fresh bean sprouts

a Large pot

a large frying skillet

a large mixing bowl

Small mixing bowl





Start by taking the 4" of lemon grass and splitting it in half, remove the outer leaves and dice the remaining half in very very small pieces. And that to the liquid contents above under Sauce ingredient into the small mixing bowl.. It's important to let sauce stand for ten to fifteen minutes .. Add Thai hot peppers for heat depending how hot you like it.. I usually make it 5 stars so I add four large Thai chili's seeds n all.. HINT: *** Do not use Jalapeño’s for this maybe cerano chili's if you can't get Thai chili's****



In the large bowl, Cube the skinless boneless chicken into 1/2" cubes, add 1 tbs ginger, 1 tbs chopped garlic, 2" lemon grass chopped, add 3 tbs soy sauce, 2 tbs Thai fish sauce let marinated for at least 15 minutes...



Take a large pot add water let come to a rolling boil... Take off heat and add Thai wide rice noodles. Cover pot with lid and let stand until the noodles are soft (Be careful not too over cook them) Rinse noodle over cold water for at least four minutes (Make sure that the noodles are cold and have no rice starch left on them) Let stand in a colander to drain HINT: (This should take all of 15 minutes or so)



Cube 1/2 block of firm tofu into 1/4" cubes, Put a LARGE nonstick pan on the stove on high heat HINT: The idea is to get the pan really hot **NOT** to burn the pan! REMEMBER old Chinese adage HOT WOK COLD OIL food wont STICK, add about 2 tbs peanut oil, add tofu, and chicken (do not drain chicken from marinate)... rather important to keep chicken and tofu moving at this point.. Let if Brown not burn.. Should only take about 2 minutes or so too cook it all but about a total of five minutes to brown it. NOTE: Your going to be done when the tofu has been browned. Remove and put on a clean plate...

Take a clean paper towel and clean skillet... scramble two large eggs in a bowl add 3 tbs of cold water.. Scramble in skillet (Make sure that the eggs are well broken apart) sit on top of cooked chicken.



Put skillet back on the stove to get hot again... Add 2 tbs peanut oil, add cooked Thai wide rice noodles and toss.. HINT :If you don't keep the noodles moving you will scorch them! The idea here is to heat the noodles threw at the same time adding a very very thin coat of oil to them allowing them to stay some what separated. Add chicken, tofu, and egg mixture after the noodles have come to temperature.

When everything has heated up add the sauce.. Now this is were you need to think... If its mixture is a little dry, add a couple tablespoons of tap water to loosen it up.. Your looking for a little sauce the noodle should pick up most of it...



when plating Add about 2 1/2 cups per serving.. cut a lime in to wedges add one lime wedge to the plate with a couple leafs of Thai basil and a nice sprinkling of chopped celantro chopped green onions and the blanched peanuts to the top of the dish..



Ill make it again his weekend and take a picture of it... The idea is to leave the celantro, lime, green onions, thai basil and peanuts on top so that the person eating it can choose how much to use and how much to leave on the plate... I myself add it all in when I add the cooked chicken (Chopped celantro, chopped green onions, chopped Thai basil) and garnish the plate with a couple slices of cucumber, lime wedge, and a couple bean sprouts.

I'm gonna switch things up and see if I can't pull off that recipe. OOOH, I can't wait! :dance:
